In our opinion, heather honey is the most valuable honey that bees can harvest in Estonia. The mildly bitter honey full off antioxidants is harvested from the heather moorlands. We take the hives to the heather fields in late July. It is similar to mobile beekeeping, full of long excursions and extensive work. Heather honey is thixotropic honey, which means that it has a gelatinous consistency and is only thinned by stirring or heating. After stirring for some time, it sets again to a gelatinous state. Because of this feature, heather honey is very difficult to get out of the frame, and according to our experience, it takes at least four times longer than it takes to extract ordinary honey. Since heather honey is very labour intensive, its price is also higher. Heather honey is very original in taste, not very sweet and with a bitter/sour undertone. Because of its high antioxidant content, heather honey is considered to be the healthiest honey in Estonia.
